Here’s a recipe to guide you through the process: 

Ingredients:

 

– 2 large eggplants

– 4 medium tomatoes

– 4 cloves of garlic, minced

– 3 eggs

– 2 tablespoons vegetable oil

– 1 teaspoon turmeric

– Salt and pepper to taste

– Optional: chopped fresh herbs (such as parsley or cilantro) for garnish 

Instruction:

1. Preheat your oven to 400°F (200°C). Place the eggplants on a baking sheet and prick them with a fork in a few places. This will prevent them from bursting while roasting. Roast the eggplants in the oven for about 30-40 minutes, or until they are soft and the skin is charred.

 

 

2. Remove the eggplants from the oven and let them cool slightly. Once they are cool enough to handle, peel off the skin and discard it. Chop the roasted eggplant flesh into small pieces and set aside.

3. In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic and sauté for a minute until fragrant.

4. Dice the tomatoes and add them to the pan. Cook for about 5-7 minutes, or until the tomatoes have softened and released their juices.

5. Add the chopped roasted eggplant to the pan with the tomatoes, onion and garlic. Stir well to combine.

6. Sprinkle turmeric, salt, and pepper over the mixture, and continue cooking for another 5 minutes, stirring occasionally.

7. In a bowl, beat the eggs. Pour the beaten eggs over the eggplant and tomato mixture into the pan. Stir gently to combine the eggs with the other ingredients. Let the mixture cook for a few minutes until the eggs are fully cooked, stirring occasionally.

8. Taste and adjust the seasoning if needed.

9. Remove the pan from the heat. Mirza Ghasemi can be served hot or at room temperature.

10. Optionally, garnish the dish with chopped fresh herbs such as parsley or cilantro before serving.
