Persian Koo Koo Sabzi is a popular Persian herb frittata packed with an assortment of fresh herbs and greens. It’s a flavorful and nutritious dish that can be served as a main course or as a side dish. 
 
Here’s a recipe to make Persian Koo Koo Sabzi: 

Ingredients: 

– 2 cups mixed fresh herbs (such as parsley, cilantro, dill, and chives), finely chopped 
– 1 cup spinach, finely chopped 
– 1/2 cup green onions or leeks, finely chopped 
– 4 eggs 
– 1/4 cup walnuts, finely chopped (optional) 
– 1 tablespoon dried fenugreek leaves (optional) 
– 1 teaspoon baking powder 
– 1/2 teaspoon ground turmeric 
– 1/2 teaspoon ground cinnamon 
– Salt and pepper to taste 
– Vegetable oil for frying 
 

 

Instructions: 

 
1. In a large bowl, combine the chopped herbs, spinach, and green onions or leeks. Mix well to combine. 
 
2. If using walnuts, add them to the bowl and mix again. Walnuts add a nice crunch and texture to the Koo Koo Sabzi. 
 
3. Add the eggs to the bowl and beat them with the mixture until its well combined. 
 

 
4. Add the dried fenugreek leaves (if using), baking powder, turmeric, cinnamon, salt, and pepper to the bowl. Mix everything together until all the ingredients are evenly incorporated. 
 
5. In a large non-stick skillet, heat a generous amount of vegetable oil over medium heat. The oil should cover the bottom of the skillet. 
 
6. Pour the herb and egg mixture into the skillet, spreading it evenly with a spatula. Reduce the heat to low and cover the skillet with a lid. 
 
7. Cook the Koo Koo Sabzi on low heat for about 20-25 minutes, or until the bottom is golden brown and the top is set. 
 
8. Once the bottom is cooked and firm, carefully flip the Koo Koo Sabzi using a large plate or a lid. Slide the Koo Koo Sabzi back into the skillet to cook the other side. If needed, add a little more oil to the skillet before sliding the Koo Koo Sabzi back in. 
 
 
9. Cook the second side for another 20-25 minutes, or until it’s golden brown and cooked through. 
 
10. Once the Koo Koo Sabzi is cooked on both sides, transfer it to a serving dish and let it cool slightly before slicing. 
 
11. Serve the Persian Koo Koo Sabzi warm or at room temperature. It can be enjoyed on its own, with flatbread, or as a side dish with yogurt or a salad. Enjoy your homemade Persian Koo Koo Sabzi!
