Litteh Pickled (torshi)
Ingredients: vinegar, eggplant, pickled cucumber, cauliflower, carrot, celery, garlic, parsley, refined salt (maximum 2.2%), spices (black seed, mint, tarragon, turmeric).
Pickling is one of the seasonings used, especially in Middle Eastern and Balkan cuisines. Pickling is a long-term preservation process in which the desired food item is placed in a solution of saltwater or vinegar with low pH and acidic properties. By using this process, perishable food items can be preserved for several months. If the food item itself contains sufficient water, adding salt alone is sufficient to make the pickling solution. In some countries like Korea, various vegetables are salted, and this salt removes the excess water present in the vegetables. Then, the vegetables with their extracted water are left to naturally ferment, forming a vinegar-like solution. Unlike the canning process, complete sterilization of the food item is not required for pickling.
