Kotlet, also known as Persian meat patties, is a popular dish in Iranian cuisine. It’s relatively easy to make and is often served with rice, bread, or as a filling for sandwiches.
Here’s a simple recipe for making Kotlet:
Ingredients:
– 500 grams of ground beef or lamb
– 1 medium onion, finely grated
– 2 eggs
– 4 slices of stale bread
– 1/2 teaspoon turmeric
– 1/2 teaspoon ground cumin
– Salt and pepper to taste
– Vegetable oil for frying
Instruction:
1. In a mixing bowl, combine the ground beef or lamb, grated onion, eggs, crumbled bread, turmeric, ground cumin, salt, and pepper. Mix everything until well combined.
2. Take a handful of the mixture and shape it into a round or oval-shaped patty, about 1/2 inch thick. Repeat with the remaining mixture.
3. Heat vegetable oil in a frying pan over medium heat. Add the patties to the pan, making sure not to overcrowd them. Cook for about 4-5 minutes on each side or until they are golden brown and cooked through.
4. Once cooked, transfer the Kotlets to a plate lined with paper towels to drain any excess oil.
5. Serve the Kotlets hot with rice, bread, or as desired. They are often accompanied by fresh herbs, such as parsley or mint, and a side of yoghurt or a squeeze of lemon juice. Enjoy your homemade kotlets!
